The Assistant Restaurant and Bar Manager will be responsible for…
- To support the day to day operation of the Restaurant, Bar and Lounge
- Work with all Food and Beverage Outlet Managers/Assistant Managers to optimise opportunities to hit and exceed budgeted targets.
- To step in for Assistant Manager’s in their absence in all areas including service, resourcing and product offering.
- To work as part of a team and to constantly evaluate, train and improve the experience our guests receive.
- Maintain the cellar to ensure all beverage lines are in stock to agreed par levels and business demands.
- Provide administration support for the F&B outlets to ensure smooth running of the departments.
- To work as part of a team and be involved with the learning and development of our F&B team members.
- Work with Outlet Managers and other Assistant Managers to establish and maintain effective employee relations across departments.
- To be proactive to guest feedback and direct the team in accordance with this.
- Be adaptable to taking on new small projects with the support of the Food and Beverage Manager, which must be rolled out in the agreed time frame.
- Assisting F&B outlets in creating and executing plans for department sales, profit and staff development.
- Assisting the F&B outlets with table plan implementation to maximise the number of covers within the dining area’s.
- Remains aware of business trends, systems and practices within the food and beverage industry to enable us remain current and open to opportunities to improve the profitability of the department.
- To take Duty Manager shifts and conduct them in line with guidelines.
- To actively engage weekly on Hubbub (our internal communication platform) to communicate positive F and B changes and Extra Miler moments.

- Strong Restaurant and Beverage service background from within hotel or venue sector, minimum 4 star standard.
- Commercially astute and financially aware.
- Ideal candidate to be level 2 WSET trained.
- A good understanding of Cellar Management/ Stock control.
- Be determined to create a memorable guest experience.
- Proven record as a strong team leader.
- Have an eye for detail.
- Have an ability to supervise team members ensuring they deliver consistent quality of service.
- Have excellent communication skills.
- Effective time management.
- Strong communication skills (verbal, listening, writing).
- Proactive and self driven with the ability to multi task.
